mocha chia pudding ✨
I don’t think I’ve ever had so many requests for a recipe.
It’s so thick and creamy with a gorgeous chocolate chia pudding base topped with an espresso protein whip.
It’s meal prep able, high in protein and honestly like eating dessert for breakfast.
Base
1 cup dairy free yoghurt (I used vanilla soya)
3 tablespoon fine dark cocoa powder
1/4 cup dairy free milk
2 tablespoon syrup (maple, honey or agave)
3 tablespoons chia seeds
Topping
250g dairy free cream cheese, room temp
30g vegan vanilla protein powder (I used @proteinworks use code ROSIE to save)
100g dairy free yoghurt
1 shot espresso
In a bowl whisk together yoghurt, cocoa powder, milk, syrup, and chia seeds until well combined.
Pour the mixture into a glass container.
Cover and refrigerate for at least 4 hours, until thickened.
Before serving make the topping by whisking together the ingredients (depending on the protein powder you use you may need more or less yoghurt)
Spread on top and serve with a dusting of cocoa powder.
