This is my version of Tarte Tatin:
✨Hand laminated dough using croissant recipe from my website⬇️⬇️⬇️

✨Ribbon sliced apples using attachment for mixer
✨Caramel
- 3 tablespoons water,
- ½ cup sugar,
- 3 tablespoons unsalted butter
Melt sugar and water and cook until amber color, add butter, until all incorporated.
Directions:
- Do 1 double and 1 single fold for the laminated dough. Roll 8 mm thick. Cut 10cm circles. Let them proof.
- Slice the apples. Roll them into a roll.
- Prepare the caramel.
- Use 8cm mold, cover the bottom with foil. Pot 1 tbs of caramel onto the bottom, place apple roll in. Bake for 30 min at 375F
- Remove apples from the pan, place them on top of proofed puff pastry circles. Sprinkle some sugar on top.
- Bake at 375F for 18 min.
- Enjoy with vanilla ice cream on top.
