Ingredients
Water: 430 ml / 14.5 oz / 1¾ cups (cold)
Instant dry yeast: 8 g / 2½ tsp
Bread flour: 550 g / 19.4 oz / ~4⅓ cups
Salt: 8 g / 1¼ tsp
Optional toppings: sesame seeds, nigella (black cumin), sunflower seeds
Equipment
Loaf pan: 21 × 11 × 5 cm (about 8.3 × 4.3 × 2 in)
Parchment paper, bowl, spatula
Method (quick view)
Add cold water and yeast, stir to dissolve.
Add flour and salt. Mix until no dry flour remains. Do not knead.
Cover and rest until doubled.
Dust, scrape onto parchment, lift parchment and place in loaf pan.
Spray water, top with sesame/nigella; press lightly to adhere.
Bake 210°C / 410°F, 25–30 min. Place a bowl of boiling water in the oven for steam.
Wrap in a cloth to cool so it stays soft inside.
