Pumpkin Spice Chia Pudding✨ One of my most requested pumpkin recipes. It’s filled with warming and cozy pumpkin spices, perfect for the Fall season. Easy to make and great for meal prep for a simple and healthy breakfast!
Here’s what you need:
5 tbsp chia seeds
1 cup almond milk
1/2 cup pumpkin purée
1 1/2 tsp pumpkin pie spice
1/8 tsp cinnamon
1 tsp vanilla
2-3 tbsp maple syrup
For topping: greek yogurt, crushed pecans, granola, cinnamon
Whisk the pumpkin puree, almond milk, pumpkin pie spice, cinnamon, vanilla and maple syrup. Until smooth. Whisk in the chia seeds. Let stand for 5 minutes then whisk again. Transfer to the fridge to set for at least 3 hours to overnight. Add a dash more milk if the mixture is too thick. Serve in 2 bowls and top with desired toppings such as greek yogurt, crushed pecans or granola and cinnamon! Enjoy!
