Ingredients
Water: 395 ml / 13.36 fl oz / 1⅔ cups (18–20 °C / 64.4–68 °F)
Instant dry yeast: 6 g / 2 tsp
Bread flour (11% protein): 550 g / 17.64 oz / ~4 cups
Salt: 6 g / 1 tsp
Optional: sesame, nigella; a bowl of hot water for steam
Method (short)
Mix all ingredients until no dry spots remain.
Cover; cold-rest in the fridge 8–10 h.
Room-temp rest ~1 h.
Portion to tray, mist with water; sprinkle seeds.
Bake 230 °C / 446 °F, 20–22 min. Add a bowl of hot water to the oven floor for steam.
Results
Crispy outside, soft inside. Beginner-friendly, repeatable, and fast cleanup.
Notes
If dough sticks while portioning, lightly oil your tool or snip with scissors.
For extra open crumb, extend the cold rest to 12 h.
