Chicken Rice Pot with Soy-Garlic Sauce
1. Cook rice with equal parts water. Once it boils, reduce to low heat, steam for 10 minutes, then let rest for another 10 minutes.
2. Sauce (for 350g chicken thigh): 3 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp sugar, 1 tbsp corn syrup, black pepper, 3 tbsp water.
3. Marinate chicken thigh with cooking wine and pepper. Sear skin-side down in olive oil until browned.
4. Add large-cut green onions and whole garlic cloves, then slice chicken and pour in the sauce. Simmer gently until cooked through. (Add a splash of water if needed.)
5. Place chopped scallions over rice, top with chicken, finish with sesame oil and sesame seeds.
6. Enjoy with wasabi for an extra kick.
