🇲🇽 Pistachio Horchata Latte
The most refreshing drink you can make right now! Traditional horchata usually uses almonds, but pistachios worked so well, you gotta give it a try!
INGREDIENTS:
Horchata:
- 200g of peeled pistachios, toasted
- 300g of rice of choice (here i’m using jasmine)
- 2 whole sticks of cinnamon
- 1 liter of water
- 1/2 cup of sugar
- 1 tbsp vanilla extract
- 1 can of evaporated milk
- 1 can of condensed milk
Coffee:
- 1-2 shots espresso (depends on your tolerance) shoutout to @delonghiph for my most prized possession - my coffee machine 🥹
Serve with:
- cinnamon powder
INSTRUCTIONS:
- To start, place your peeled pistachios in a pan on low heat for toasting. Add your rice and cinnamon sticks and allow to toast before placing it into a sealed container along with water, sugar, and vanilla extract.
- Blend well and strain until smooth. Add evaporated milk and condensed milk and keep chilled.
- Serve over ice (you may add more milk to dilute the sweetness)
