Spicy Cumin Enoki Mushrooms in 10 Minutes

This is a super quick dish/snack that can be done in 10 minutes. The enoki mushrooms are quickly boiled then pan-fried until golden on the outside, then stir-fried with chillies and cumin seeds, which bring a very distinct aroma and taste to the mushrooms, the taste is similar to street barbecue😋 so flavourful and crunchy, try this out if you like enoki mushrooms!
enoki mushrooms 600g
garlic 6 cloves, chopped
coriander 3 sprigs, chopped
10 dried chillies, cut into 1cm length
cumin seeds, 2 tbsp
soy sauce, 2 tbsp
oil
1.Cut the ends(about 3cm) of the enoki mushrooms off. Boil them for 1 minute, take out, and drain the water.
2.Heat up the wok with high heat, once hot add oil, add the enoki mushrooms, be careful with the oil splashes. Pan-fry the enoki mushrooms for 3-5 minutes until it’s golden and a bit crispy on the outside.
3.Push the mushrooms aside, add garlic and chillies, stir for a little until aromatic, add cumin seeds, stir for about 1 minute, add soy sauce.
4.Stir for another minute until the sauce is all absorbed, add coriander, mix and serve.
