Your next high-protein lunch sorted 🤝 this cheesy cajun chicken wrap gets a 10/10 from me 😍 the recipe makes 2 wraps, each wrap is 482 calories and 42g protein 💪🏼
260g raw diced chicken breast
1/2 a small yellow pepper
2 tsp cajun seasoning
1 tsp chicken seasoning
1/2 tbsp tomato puree
50g lightest cream cheese
60g grated mozzarella/ cheese mix
Cut the chicken into small 1-2cm chunks and coat in the cajun and chicken seasoning.
Add the chicken and pepper to a frying pan with a spray of oil over a medium-high heat for around 12 minutes until cooked through.
Tip the contents of the pan into a large bowl and add the cream cheese, tomato puree and grated cheese.
Stir to combine then tip half of the mix into the centre of one wrap (microwave the wrap first!) fold either side in, flattening the mixture down a bit, then flip it over, tuck it under and roll it up so it’s wrapped nicely and tightly. Repeat for the other wrap.
Add another spray of oil to the pan you just used (no need to clean the pan) and pop the wraps in for a few minutes with the edge of the wrap facing down. Use a spatula to spread any leftover sauce over the top of the wrap, then flip to cook the other side.
Leave to cool for a few minutes then dig in!
