Soak the gelatin in cold water for at least 10 minutes. 2. Chop the passion fruit chocolate finely. 3. Heat 50g of heavy cream A with trimoline in the microwave for about 1 minute 20 seconds until warm. 4. Add the chopped chocolate and stir until completely melted. 5. Squeeze excess water from the soaked gelatin and add to the mixture. 6. Pour in the remaining 70g of cold heavy cream B and blend with an immersion blender until smooth. 7. Cover the surface with cling film (touching the ganache surface directly) and refrigerate for at least 12 hours. --- 🌿 Matcha Financier Preparation 1. Sift together cake flour, almond powder, and matcha powder 2. Brown the butter over medium heat until it develops a nutty aroma. Strain and cool to 50–55°C (122–131°F). 3. In a bowl, lightly whisk the egg whites with sugar and honey for about 2 minutes. 4. Add the sifted dry ingredients and mix just until no flour is visible. 5. Stir in the warm browned butter (ensure it's not too hot to avoid cooking the egg). 6. Pour batter into a piping bag and fill financier molds about 80% full. 7.
