One Pot Chicken Tikka Rice✨
If you’re craving biryani and want to make one in less time than a traditional one, then try this flavour-packed Chicken Tikka Rice. I have to admit, I might like this better than the regular one 😝
This recipe serves 2-3
Ingredients
500g boneless chicken thighs, cut into chunks
Marination:
Drizzle of mustard oil
1/4 cup hung curd
Fine paste of 8 garlic cloves, 1-inch piece ginger, and 3 green chilies
2 tsp Kashmiri chili powder, 1 tsp hot chili powder, 1 tsp crushed coriander seeds, 1/2 tsp cumin powder, 1/2 tsp black pepper powder, 1 tsp biryani masala powder (or garam masala powder)
1 heaped tbsp tomato paste
A handful of finely chopped mint and coriander leaves
1 tbsp lemon juice
2 onions, thinly sliced
2 bay leaves, 1 cinnamon stick, 3 green cardamoms, 2 cloves, 1/2 tsp shah jeera
1 tsp honey
For the rice:
300g long-grain basmati rice
1 tbsp ghee
A handful of chopped mint and coriander leaves
1 tbsp kewra water
Charcoal for smoking the dish
